Here's something you don't see every day in Cuenca: real sauerkraut.

Pájaro y Bestia now makes its own, and it's as honest as food gets. Three ingredients: cabbage, salt and caraway seeds. That's it. It's naturally fermented, never pasteurized, never heat-treated and never made with vinegar.

Why that matters

A lot of shelf sauerkraut is cooked so it can sit at room temperature for months, and much of it gets its sour taste from vinegar. Real sauerkraut gets its tang the slow way. Salt pulls the water out of the cabbage, the cabbage sits in its own brine, and natural bacteria do the work over time. That's fermentation, a tradition families in Germany and Eastern Europe have kept alive for generations.

And because Pájaro y Bestia never heats it and keeps it chilled, the probiotics are still alive when it reaches your table.

How to eat it

  • On a sandwich. A Reuben, with corned beef, Swiss cheese and a little dressing, is the classic.
  • Piled on a hot dog or a good sausage.
  • Next to roast pork, where the sourness cuts right through the richness.
  • A forkful in a salad, or folded into your eggs in the morning.
  • Straight from the jar. Santiago won't judge.

Tip: keep it in the fridge and use a clean fork every time, so it stays crisp and fresh.
